Ingredients
- For the cake
- 200 grams softened butter
- 250 grams sugar
- 1 pinch salt
- 8 eggs (separated)
- 3 Tbsps Brandy
- 250 grams grated Dark chocolate
- 1 organic Lime
- 400 grams ground almonds
- 2 tsps Baking powder
- For the garnish
- 150 grams powdered sugar
- 1 organic Lime
- Lemon balm (as desired)
Preparation steps
Preheat the oven to 160°C (approximately 325°F). Grease a bundt cake pan with butter and sprinkle with flour.
For the cake, whip the egg whites until stiff and chill. Beat the butter until creamy. Gradually add sugar, salt and the egg yolks. Stir until frothy. Add the brandy, grated chocolate and lime zest. Fold the egg whites into the mixture. Add the almonds and baking powder. Whisk rapidly until the ingredients are well mixed. Pour the mixture into the prepared pan. Bake for 50-60 minutes. Remove from the oven and cool slightly in the pan. Carefully remove from the pan and cool completely on a wire rack.
For the garnish, mix the powdered sugar and the lime zest. Squeeze the juice from the lime and stir into the powdered sugar, forming a thick icing. Spread the icing on the cake and sprinkle with more lime zest. Serve garnished with lemon balm.
