- For the cupcakes
- 3 ¼ cups all-purpose flour
- ½ cup cocoa powder
- 6 tsps Baking powder
- ½ cup caster sugar
- ½ cup Chocolate chip
- ½ cup butter (melted)
- 1 ½ cups milk
- 1 tsp vanilla extract
- 2 eggs
- For the buttercream
- 1 cup unsalted butter (scant)
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 3 ozs Chocolate cookie (finely crushed)
- To decorate
- Chocolate ball

For the cupcakes: heat the oven to 170°C (150° fan) 325°F gas 3. Place paper cases in a 12 hole muffin tin.

Sift the flour, cocoa powder, baking powder and sugar into a mixing bowl. Stir in the chocolate chips.

Whisk together the butter, milk, vanilla and eggs.
4.
Pour into the dry ingredients and mix until just combined.
5.
Spoon into the paper cases and bake for about 25 minutes until well risen and firm. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.

For the buttercream: beat the butter until soft. Sift in the icing sugar and beat until smooth. Stir in the vanilla and crumbs.
7.
Spoon into a piping bag and pipe swirls on top of the cakes. Decorate with chocolate balls.
