- For Cookie Dough
- 1 ½ cups all-purpose flour
- ½ cup dutch-processed cocoa powder
- ½ tsp baking soda
- ½ cup butter (at room temperature)
- ½ cup granulated sugar
- ½ cup packed brown sugar
- ¼ cup creamy Peanut butter
- 1 egg
- 1 Tbsp milk
- 1 tsp pure vanilla extract
- 1 cup Chocolate chip
- For Peanut Butter Filling
- ¾ cup sugar
- ½ cup creamy Peanut butter

For Cookie Dough:

Preheat oven to 375º F. Line two baking sheets with parchment paper.

In a medium bowl, sift together the flour, cocoa powder and baking soda.

In a large bowl, beat together butter, granulated sugar, brown sugar and peanut butter until light and fluffy. Add egg, milk and vanilla and beat well. Gently stir in the flour mixture and add the chocolate chips, blend well. Form the dough into 1 inch balls and set aside.

For Peanut Butter Filling:

Combine confectioners' sugar and peanut butter in a mixing bowl; beat until smooth. Form into 1/2 inch balls.

To Assemble and Bake:

Gently flatten the chocolate balls. Place a peanut butter ball in center of chocolate dough and carefully fold chocolate dough around the peanut butter filling. Roll back into a ball.

Place balls on prepared baking sheet about 2 inches a part.

Lightly grease the bottom of a flat-bottomed drinking glass, lightly flatten each cookie to a thickness of 1/2-inch.

Bake cookies for 7 to 9 minutes, or until the surface begins to slightly crack. Let cool for 2 minutes on the baking sheet. Transfer cookies to wire racks and cool completely. Serve.
