200 grams Dark couverture chocolate
Whipped cream
2 Pear
white wine
1 Cinnamon stick
1 Tbsp chopped Pistachio
mint (for garnish)

Preparation steps

Finely chop the mocha chocolate and dark couverture. Pour the cream into a saucepan and add the mocha chocolate and dark couverture. Heat the cream and let the chocolate melt while stirring. Pour the chocolate cream into a bowl and let cool. Chill the chocolate cream for 6 hours in the refrigerator.

Peel the pears, remove seeds and cut into eighths. Boil the white wine with cinnamon stick in a small pan. Add the pears and cook for 5 minutes. Draw the pan from heat and allow to cool.

Whisk the chocolate cream with the whisk of the hand mixer for 5 minutes. Pour the chocolate cream in a piping bag with a large star tip and pipe into glasses. Drain the pears and arrange over the chocolate cream. Sprinkle with pistachios and serve garnished with mint.
