- 4 ozs plain Dark chocolate (70% cocoa solids, chopped)
- 2 ½ ozs Cake crumbs
- ¾ cup powdered sugar
- ½ cup Almond flour
- 2 Tbsps Brandy (or rum)
- 4 Tbsps cream (48% fat)
- ½ cup cocoa powder
Preparation steps

Melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water, then stir until smooth.

Mix together the crumbs, icing sugar, ground almonds and brandy or rum until combined, then gradually add the melted chocolate, mixing well. Stir in the cream.

Chill the mixture for at least 1 hour until firm enough to handle.
4.
Take teaspoons of the chilled mixture and roll into balls- you should get about 30. Roll the balls in cocoa powder. Keep chilled and eat within 2 weeks.
