700 grams Spelt flour
1 cube Yeast
2 tsps Sea salt
1 pinch Whole Wheat Sourdough Starter about 150 grams (approximately 5 ounces)
2 Tbsps Walnut oil
200 grams coarsely chopped Walnut
200 grams coarsely chopped Dark chocolate
Pastry flour (for kneading)

Preparation steps

Dissolve the yeast in 2 tablespoons of lukewarm water. Combine the spelt flour, dissolved yeast, sea salt, sourdough starter and 420 ml (approximately 1 3/4 cups) of lukewarm water in a large bowl and knead with the dough hook attachment of an electric mixer until a smooth dough is formed. Cover and let rise in a warm place for about 1 hour.

Transfer the dough to a floured surface and knead in the walnut oil, chopped walnuts and chopped dark chocolate. Place the dough in a well-greased loaf pan, cover with a damp cloth and let rise for 30 minutes.

Preheat the oven to 180°C (approximately 350°F) and place a small, ovenproof bowl of water on the bottom rack. Bake for 60 minutes, until browned and hollow sounding when tapped. Remove from the oven, allow to cool slightly in the loaf pan, then slice and serve with butter or goat cheese, if desired.
