- 1 bunch Kale (large)
- 2 Peaches rinsed and cut into wedges (may substitute nectarines)
- ½ cup shelled Pecan finely chopped (optional)
- For Vinaigrette Dressing
- 2 Tbsps Maple syrup
- 2 Tbsps good-quality olive oil
- 1 Tbsp apple cider vinegar
- 2 tsps light Miso paste (white or yellow)
- coarse salt (to taste)
- freshly ground Black pepper (to taste)
Preparation steps
1.
Place kale in a large salad bowl.

In a small bowl, whisk maple syrup, olive oil, vinegar, miso, salt and pepper together.
3.
Drizzle vinaigrette over the kale and toss and massage well using your hands. Add peaches and pecans and gently toss. Serve.
