1 bunch Kale (large)
2 Peaches rinsed and cut into wedges (may substitute nectarines)
½ cup shelled Pecan finely chopped (optional)
For Vinaigrette Dressing
2 Tbsps Maple syrup
2 Tbsps good-quality olive oil
1 Tbsp apple cider vinegar
2 tsps light Miso paste (white or yellow)
coarse salt (to taste)
freshly ground Black pepper (to taste)

Preparation steps

Place kale in a large salad bowl.

In a small bowl, whisk maple syrup, olive oil, vinegar, miso, salt and pepper together.
