12 ozs Chorizo (Spanish spiced pork sausage)
2 onions (quartered)
2 cloves garlic cloves (minced)
3 cups potatoes (diced)
1 small Leek (cleaned and chopped)
2 carrots (peeled and chopped)
2 stalks Celery (rinsed and chopped)
2 cups canned Tomatoes
4 cups Vegetable broth
salt (to taste)
freshly ground Black pepper
1 bay leaf
2 tsps dried oregano
2 cups canned chickpeas (chick peas)
2 Tbsps Sour cream (or creme fraiche)
fresh parsley (for garnish)

Preparation steps

In a large stockpot heat the olive oil over medium heat. Slice the chorizo into 2-inch slices. Cook the chorizo, onions and garlic in the olive oil for about 4 to 5 minutes. Add the vegetables, canned tomatoes and broth, season with salt, pepper, bay leaf, and oregano. Cover and simmer gently for about 30 minutes on low heat.

Drain the garbanzo beans and add to the stew. Heat through, about 3 minutes. Check seasoning and adjust if necessary. Swirl sour cream or creme fraiche on top of stew. Garnish with fresh parsley. Serve.
