Christmas Cake with Dried Fruit and Nuts

- 1 ½ cups mixed Dried Fruit (Your choice)
- freshly brewed Christmas tea (such as apple tea)
- 3 Tbsps Rum
- 100 grams softened butter
- brown sugar
- 1 pkg Vanilla sugar
- 3 eggs
- 1 tsp Organic orange peel (zested)
- 1 pinch salt
- 1 cup Pastry flour 1050 type (whole wheat) or 630 (spelt flour)
- 1 cup Pastry flour Type 405 (wheat flour)
- 3 tsps Baking powder
- ½ cup slivered almonds
- ½ cup blanched almonds (finely crushed)

Preparation steps
Cut the dried fruit into small pieces and place in a bowl; add the tea and rum. Grease the loaf pan and sprinkle with flour.
Beat the butter with the sugar and vanilla sugar until fluffy. Separate the eggs, then beat the egg whites until stiff. Stir the egg yolks into the butter mixture, one at a time, mixing well after each addition. Mix in the orange zest, salt and dried fruits (including the liquid). Sift in the flour and baking powder, then add the ground almonds and almond slivers. Mix everything together, then fold in the egg whites.
Pour the batter into the loaf pan and smooth. Bake in the oven (middle rack, 160°C or approximately 325°F) for 45-50 minutes. Pull the cake out of the oven. Allow to cool for 10 minutes, then remove from the pan and let cool completely.
Serve with coffee.
