1 stalk Celery (cut into 1/2 inch pieces)
3 large carrots (peeled and cut into 1 inch pieces)
6 medium Red pepper flakes (peeled and cut into 1 inch pieces)
2 bay leaves
1 sprig thyme
1 sprig rosemary
2 lbs chuck steak (for roast)
kosher salt (to taste)
freshly ground Black pepper (to taste)
2 Tbsps olive oil
1 medium yellow onion (diced)
1 Tbsp Worcestershire sauce
2 cups Beef broth
2 Tbsps Tomato paste
1 Tbsp minute Tapioca (optional, for thickening)

Preparation steps

1.
Place the celery, carrots, potatoes, bay leaves, thyme and rosemary in the slow cooker.
2.
Dry the meat with a paper towel and season liberally with salt and pepper.
3.
Heat oil in a large skillet over medium heat. Add meat and brown. When the meat is browned, place it in the slow cooker.
4.
In the same skillet cook the onions on medium heat until translucent. Add the Worcestershire, broth, and tomato paste to the onions in the skillet. Mix and cook until it just begins to bubble.
5.
Pour broth mixture over everything in the slow cooker. Add tapioca to the slow cooker if using, season with salt and pepper, and mix everything together. Cover and cook on high for 6 hours.
