- 1 onion (chopped)
- 2 cloves garlic cloves (finely chopped)
- 18 ozs Mushrooms (chopped)
- 2 Tbsps flour
- salt
- peppers
- 4 cups vegetable stock
- ⅞ cup dry white wine
- 0.333 cup dry sherry
- To garnish
- flat-leaf parsley

2 Bowls, 1 Fine-mesh sieve, 1 Wooden spoon, 1 Hand mixer, 1 Rubber spatula, 1 Springform pan (20 cm Ø), 1 Wire rack, 1 Large knife, 1 Pot, 1 Small bowl, 1 Fine grater, 1 Small knife, 1 Offset spatula, 1 kleine Skillet, 1 Whisk, 1 Parchment paper
Preparation steps

Heat the butter in a large pan, add the onion and garlic and cook gently until soft, but not browned.

Add the mushrooms and and sprinkle with the flour. Cook until soft and season with salt and pepper to taste.
3.
Stir in the stock and wine and bring to a boil. Cover and simmer for 10 minutes. Stir in the sherry and serve immediately garnished with parsley.
