- 2 Tbsps sunflower oil
- 1 onion (finely chopped)
- 3 cloves garlic cloves (minced)
- fresh ginger (peeled and minced)
- 2 tsps Curry powder
- 1 tsp Cumin powder
- 1 tsp Coriander
- ½ tsp Chili powder
- 2 large, floury potatoes (peeled and diced)
- 1 cup Red lentils
- 2 cups canned, chopped Tomatoes
- 2 ½ cups low-sodium vegetable stock
- 2 Tbsps mint (finely chopped)
- salt
- freshly ground peppers
Preparation steps

Heat the oil in a large casserole dish set over a medium heat until hot. Add the onion, garlic, ginger, and a pinch of salt, sautéingA for 4 - 5 minutes until golden.

Add the spices, stir well, and cook for 1 minute until the oil starts to bubble through the spices. Stir in the potato, lentils, chopped tomatoes, and stock.

Bring the stew to a simmer and then reduce the heat slightly and cook steadily for 20 - 25 minutes until the lentils are tender.

Season to taste with salt and pepper. Ladle into bowls and garnish with chopped mint before serving.
