500 grams all-purpose flour
100 grams Shredded wheat
300 milliliters lukewarm water
1 cube fresh Yeast
3 Tbsps olive oil
1 tsp salt

Preparation steps

Place flour in a bowl. Reserve 1 tablespoon wheat meal. Add rest of wheat meal, 2 tablespoons oil and salt to flour and mix until smooth. Mix yeast with lukewarm water and then mix with flour. With the dough hook of the electric mixer, knead into a smooth dough, cover and let rise in a warm place about 45 min.

Then thoroughly knead the dough on a floured work surface. Shape into 2 balls and let rise about 45 minutes. Combine dough balls and form into ciabatta loaf. Brush with oil and sprinkle with reserved wheat meal. Bake in a preheated oven at 240°C (approximately 450°F) for 10 minutes, lower temperature to 200°C (approximately 400°F) and bake another 15-20 minutes.
