250 grams Whipped cream
2 Cinnamon stick
2 Tbsps honey
100 grams Natural yogurt
2 egg yolks
½ tsp cinnamon
1 Tbsp slivered almonds (for garnish)
1 Tbsp chopped Pistachio (for garnish)
For the hot blackberries
100 grams Blackberry
100 grams Sour cherry
250 milliliters Cabbage
sugar (as desired)
½ tsp cornstarch

Preparation steps

For the cinnamon parfait, bring cream and cinnamon sticks to a boil, then remove cinnamon sticks let cool. In a metal bowl set over a pan of hot water, beat yolks with honey and ground cinnamon until lightened and frothy. Fold in yogurt. Beat cooled cream until stiff and fold into custard. Pour mixture into a square baking pan, smooth top, cover with foil and freeze until solid, 3-4 hours.

For the hot blackberries: Remove pits from cherries and bring to a boil with cherry juice. Mix cornstarch with a little water and whisk into cherry juice. Simmer until thickened. Sweeten to taste with sugar and gently mix in blackberries. Divide fruit mixture among plates. Invert parfait, cut into slices and arrange on the blackberries. Serve sprinkled with almonds and pistachios.
