Ingredients
for
4
- Ingredients
- 4 large Apple
- 1.333 cups Blackberry
- 2 Tbsps honey
- ¼ cup Black currant juice
- 1 generous pinch grated Lemon peel
- 2 sticks cinnamon
- 1 ½ Tbsps butter
Preparation steps
1.
Wash, dry and core the apples, cut in half crossways and scrape out some of the flesh with a spoon or melon baller to make small `bowls´.
2.
Put the blackcurrant juice into a pan with the honey, the halved cinnamon sticks and lemon peel, bring to a boil and boil until reduced slightly. Remove from the heat and stir in the blackberries.
3.
Fill the apples with the stuffing (reserving the cinnamon sticks and 2 tablespoons blackberries to garnish) and put into a buttered, ovenproof dish.
4.
Bake in a preheated oven at 350°F for about 45 minutes.
5.
Put on small plates, garnish with the cinnamon sticks and the reserved blackberries and serve.
