Preparation steps

1.

Preheat oven to 180°C / 350°F. Rinse Cornish game hen chickens, pat dry and season inside and out with salt and pepper. Rinse blackberries and trim if necessary. Rinse apples, quarter, remove cores and cut into slices. Mix blackberries and apples and place inside game hen. Place breast side up in a buttered roasting pan.

If any fruit remains, place in pan. Drizzle red wine over Cornish game hens and roast for 30 minutes, basting occassionally. Remove from oven and serve.
