With Apple cider vinegar you give your stomach a treat: this is due to its antibacterial effect, which puts an end to unruly putrefactive bacteria in the intestine and promotes relaxed digestion. Herring provides us with many healthy omega-3 fatty acids.
Instead of the baked potatoes, normal baked potatoes also go wonderfully with the herring salad with apple. You can also replace the apples with pears at your discretion, which brings variety to the plate.

- 36 ozs new potatoes
- 2 Tbsps Canola oil
- salt
- peppers (From the mill)
- 1 Tbsp dried thyme leaves
- 2 Apple
- 3 double fillets herring (10 ounces)
- 1 red onion
- 3 Tbsps Crème fraiche (60 g)
- 5 ozs low fat Sour cream
- 1 Tbsp honey
- 2 Tbsps apple cider vinegar
- ground paprika
- 1 tsp dried Dill
Preparation steps
Wash potatoes thoroughly and cut them in half or quarters depending on size. Mix with oil, salt, pepper, and thyme and place on a baking tray lined with baking paper. Bake in a preheated oven at 225 °C / 425 °F for about 45 minutes until golden brown.
In the meantime, clean, wash, and finely dice apples. Rinse the fillets, dab them dry and cut into bite-sized pieces. Peel onion, halve, and cut into fine half-rings. Mix crème fraîche with sour cream, honey, and apple cider vinegar and season with a little salt and pepper.
Mix the fish with the apple cubes, arrange on plates, and sprinkle with onion and paprika powder. Add baked potatoes and serve everything garnished with dill.
