- 28 ozs Red cabbage
- 2 Apple
- 2 Tbsps lemon juice
- salt
- 4 Tbsps apple cider vinegar
- 1 tsp honey
- 4 Tbsps olive oil
- peppers
- 2 Tbsps walnut kernels
- 1 Cress
Preparation steps
Clean and wash red cabbage and apples. Slice red cabbage into fine strips, cut apples into narrow wedges. Sprinkle apple slices with 1 tablespoon lemon juice. Knead red cabbage with a little salt and remaining lemon juice vigorously with your hands and mix. Let cabbage stand for approx. 10 minutes.
Meanwhile, for the dressing, whisk apple cider vinegar with honey. Gradually pour in the oil, season with salt and pepper.
Arrange red cabbage with apples on plates. Drizzle with dressing and sprinkle with pepper. Chop walnuts, cut cress from the bed. Sprinkle both over red cabbage and apples.
