8 ozs milk (whole)
7 ozs whole spelt flour
4 eggs
1 pinch salt
2 Apple
4 tsps Canola oil
8 tsps honey
½ tsp cinnamon

Preparation steps

1.

For the dough, mix milk with flour until smooth. Mix in eggs with 1 pinch of salt and let rest for about 10 minutes.

Meanwhile, wash apples, quarter, core and cut into narrow wedges.

For each baked apple pancake, heat 1 tsp oil in a frying pan. Saute 1/4 of each apple in it for 3-4 minutes over medium heat. Drizzle with 1 tsp honey and caramelize for 2 minutes.

Pour 1/4 of batter over top, let set for 1-2 minutes and brown lightly. Carefully turn the pancakes and bake until golden brown. Bake a total of 4 pancakes in this manner. Place baked apple pancakes on plates, drizzle with remaining honey and dust with cinnamon.
