4 egg whites
1 pinch salt
300 grams powdered sugar
2 Tbsps lemon juice
2 tsps Ground cinnamon
350 grams ground almonds (unpeeled)

Preparation steps

1.

Beat the egg whites with the salt until stiff. Gradually sprinkle in the powdered sugar. Beat until a smooth meringue has formed. Add the lemon juice and beat until stiff. Set aside 3-4 tablespoons for the glaze and chill.

Mix the cinnamon and almonds into the remaining egg whites. Mix into a smooth dough.

Sprinkle almonds onto a work surface. Roll out the dough until about 6-8 mm (approximately 1/4 inch) thick. Use cookie cutters to cut out stars. Place the stars on a lined baking sheet. Spread the retained glaze on the stars.

Let dry overnight at room temperature.

Preheat the oven to 120°C (approximately 250°F).

Bake the stars for about 25 minutes. Allow to cool and serve.
