- 1 large egg yolk
- ¾ tsp pure Almond extract
- 1 Tbsp heavy cream
- ½ cup sliced almonds
- 2 cups all-purpose flour
- 1 cup unsalted butter (softened)
- ⅔ cup granulated sugar
- ¼ tsp salt
Preparation steps

Adjust oven rack to middle position. Preheat oven to 375 degrees F.

Using a fork, beat egg yolk, almond extract, and cream together in a small bowl; until combined. Set aside.

Using a food processor, grind almonds and 2 tablespoons flour together until fine and powdery. In a separate bowl combine almond mixture with remaining flour; set aside.

Using an electric mixer, cream butter and sugar together, until light and fluffy, about 3 to 4 minutes. With mixer running, add egg and cream mixture and beat until incorporated. Scrape sides of the bowl. With mixer running on low speed, gradually beat in the almond and flour mixture until fully incorporated. Scrape down bowl and stir several times.

Fill cookie press with dough per manufacturer's instructions. Press cookies onto ungreased cookie sheet, spacing about 1 to 2-inches apart. Bake one sheet at a time, about 10 to 12 minutes, or until cookies are light golden brown. Rotate cookie sheet halfway through baking time to ensure even baking.

Cool cookies on cookie sheet about 10 to 15 minutes, or until just warm. Transfer to wire rack using a metal offset spatula. Cool completely. Store in an airtight container.
