Walnuts are great brain food that boosts learning ability and memory. The valuable omega-3 fatty acids from the nuts improve communication between brain cells and the flow properties of the blood. By lowering LDL cholesterol levels, the kernels can also help prevent arteriosclerosis.
If you don't have a piping bag with a star nozzle, you can also use a freezer bag with one corner cut off for the piped cookies with spelt flour. For some variation, you can replace the walnut kernels in the piped cookies with spelt flour with almonds or hazelnuts. You can replace the maple syrup with honey, for example.

- 6 ozs walnut kernels
- 7 ¼ ozs Spelt flour (Type 630)
- 4 ½ ozs soft butter
- 1 ¾ ozs Maple syrup
- 2 ¼ ozs Raw cane sugar
- ½ tsp Ground cinnamon
- 2 eggs
- 1 egg yolk

Preparation steps
Finely grind walnuts in a blitz chopper and mix with flour. Cream butter in a bowl with maple syrup, sugar, cinnamon, eggs and egg yolks. Add the flour mixture and mix until smooth.
Fill the dough into a piping bag with a star-shaped nozzle and pipe 40 squiggles with a diameter of approx. 2-inches and a little space between them onto two baking sheets lined with baking paper.
Bake shortbread cookies with spelt flour in a preheated oven at 200 °C / 400˚ F for 10-12 minutes, one after the other, until golden brown. Then remove from the baking tray with the baking paper and allow to cool.
