¾ oz fresh Yeast
2 Tbsps Beet- sugar
4 ½ ozs lukewarm milk (whole)
9 ozs whole spelt flour (+ 1 tablespoon to work)
2 Tbsps dark cocoa powder
1 pinch salt
1 ¾ ozs Chocolate chip
2 Tbsps dried Sour cherry
3 ozs Cherry juice
7 ozs Soy- Skyr
1 pinch Fleur de sel

1 Grill, 4 long, clean wooden sticks or Wooden skewers

Preparation steps

1.

Mix yeast with 1 tablespoon sugar and milk in a bowl until smooth and let rest for about 10 minutes.

Mix flour, cocoa powder, 1 pinch of salt and remaining sugar in a mixing bowl. Add yeast milk and knead everything into a smooth dough, adding a little milk or flour if needed. Mix in chocolate drops and let the dough rise, covered, for about 1 hour.

Meanwhile, chop dried cherries and simmer with cherry juice in a saucepan over medium heat for 10-15 minutes until a syrupy consistency. Then allow to cool slightly.

Stir Skyr until creamy, add cherry mixture, and incorporate. Season to taste with fleur de sel.

5.

Divide dough into 4 portions and roll into 4 strands on lightly floured work surface, wrap around 1 wooden stick each and grill chocolate stick bread over a hot grill or open fire, turning constantly, for 10-15 minutes. Serve with cherry dip.
