- 1 onion
- 1 red chili pepper
- 2 garlic cloves
- 2 Tbsps butter
- 1 tsp Turmeric
- 1 tsp freshly grated ginger
- 500 milliliters Coconut milk
- 2 sprigs Lemongrass
- 150 grams lupin flour
- 300 milliliters Vegetable broth
- 100 grams carrots
- 100 grams Snow peas
- salt
- 1 scallion
- 75 grams shiitake mushrooms
Preparation steps

Peel onion and dice finely. Peel garlic and chop. Heat butter in a pan and saute onion, garlic and chile pepper. Add turmeric and ginger and saute together briefly. Deglaze pan with coconut milk. Peel lemongrass, cut lower sections into very thin rings, add to coconut milk. Bring to a boil.

Dice lopino, put in a bowl and pour one ladle of soup over. Let stand. Add vegetable broth to the soup. Peel carrots, cut into stirps. Rinse snow peas. Clean mushrooms and cut into strips. Add carrots, snow peas and mushrooms to the soup. Simmer until vegetables are al dente.

Add lopino with liquid and reheat. Season soup with salt and pepper. Pour into bowls and sprinkle with chopped scallions. Serve.
