Ingredients

For Rice Pudding:
2 cups thin Coconut milk
2 cups water
1 Tbsp sugar (or xylitol)
1 cup Rice
1 Tbsp Coconut flakes
Orange Topping:
3 blood orange or Oranges (peeled and chopped)
2 Tbsps sugar (or xylitol)
2 Tbsps water
Toppings:
1 sliced Orange
1 Tbsp puffed Millet (or any seed/nut of choice)
1 Tbsp coconut sugar (optional)
cinnamon

Preparation steps

1.

To prepare rice pudding: In a medium-sized saucepan bring the coconut milk, water, and sugar/xylitol to a boil.

2.

Add the rice and coconut flakes and cook according to the instructions on the rice packet, stirring from time to time.

3.

To prepare oranges: In a small saucepan bring chopped oranges, sugar/xylitol, and water to a boil and cook for 2-3 minutes.

4.

When rice is fully cooked place the pudding in small serving jars or cups. Layer with the orange topping and then sprinkle with the millet/seed/nut toppings.

5.

Finish with fresh sliced orange pieces and sprinkle with coconut sugar and cinnamon before serving.
