Ingredients
- For Rice Pudding:
- 2 cups thin Coconut milk
- 2 cups water
- 1 Tbsp sugar (or xylitol)
- 1 cup Rice
- 1 Tbsp Coconut flakes
- Orange Topping:
- 3 blood orange or Oranges (peeled and chopped)
- 2 Tbsps sugar (or xylitol)
- 2 Tbsps water
- Toppings:
- 1 sliced Orange
- 1 Tbsp puffed Millet (or any seed/nut of choice)
- 1 Tbsp coconut sugar (optional)
- cinnamon
Preparation steps
To prepare rice pudding: In a medium-sized saucepan bring the coconut milk, water, and sugar/xylitol to a boil.
Add the rice and coconut flakes and cook according to the instructions on the rice packet, stirring from time to time.
To prepare oranges: In a small saucepan bring chopped oranges, sugar/xylitol, and water to a boil and cook for 2-3 minutes.
When rice is fully cooked place the pudding in small serving jars or cups. Layer with the orange topping and then sprinkle with the millet/seed/nut toppings.
Finish with fresh sliced orange pieces and sprinkle with coconut sugar and cinnamon before serving.
