7 ozs Coconut milk (9% fat)
7 ozs Round grain- Brown rice
1 pinch salt
10 ozs Strawberries
2 Tbsps honey
2 tsps Wasabi paste
2 Lemon balm

Preparation steps

1.

Slit vanilla bean lengthwise and place in a pot with coconut drink and milk. Add rice and 1 pinch of salt. Bring everything to the boil while stirring. Cover and cook rice over low heat for about 45 minutes, stirring repeatedly and adding a little water if necessary.

In the meantime, clean and wash the strawberries. Puree one third of the strawberries together with 1 tablespoon honey, cut the rest into slices.

Remove the pot with the rice pudding from the heat and remove the vanilla pod. Stir the remaining honey into the rice and mix in the strawberry slices.

4.

Stir wasabi paste with 1 tablespoon water until smooth. Mix pureed strawberries with wasabi and fold into coconut milk rice. Wash lemon balm, shake dry, pluck leaves and sprinkle over rice.
