500 grams mostly waxy potatoes
2 carrots
1 egg
2 Tbsps Pastry flour (depending on potato variety)
200 grams Cod
1 tsp minced Dill
salt
Nutmeg (freshly grated)
vegetable oil (for frying)

Preparation steps

Peel, rinse and coarsely grate potatoes and carrots. Wrap up in a damp tea towel and squeeze out juice into a bowl. Let potato starch settle at the bottom of the bowl. Combine vegetables, egg and potato starch.

Rinse cod, pat dry and dice. Stir into vegetables and season with dill, salt and nutmeg.

Heat oil in a pan. Form patties with mixture and cook in hot oil until golden brown on both sides, about 3-4 minutes. Remove and drain on paper towels, then place in an oven preheated to 80°C (approximately 175°F) to keep warm. Repeat to create about 12 patties. Serve warm.
