Ingredients

For the cod rolls
150 grams cream cheese (pure)
1 pinch cayenne pepper
4 medium Cod (or 8 small)
1 generous pinch ground paprika
also
500 grams waxy potatoes
salt
800 grams mild Sauerkraut (canned)
4 Tbsps clarified butter
100 milliliters white wine
1 Tbsp Juniper berries
ground paprika
freshly ground peppers
parsley (for garnish)

Preparation steps

For the cod rolls, mix cream cheese with cayenne, spread on cod fillets and roll up. Tie cod fillet rolls with kitchen twine, sprinkle with paprika and refrigerate. Rinse potatoes and boil in salted water about 25 minutes.

Sauté sauerkraut in 1-2 tablespoons clarified butter. Pour wine into sauerkraut and stir in juniper berries. Set cod rolls on top of the sauerkraut mixture, cover and simmer over low heat 10-15 minutes.

Drain potatoes, rinse, peel and cut into slices. Sauté potato slices in remaining clarified butter and season lightly with salt, pepper and paprika.

Season sauerkraut with paprika and pepper. Serve sauerkraut topped with cod rolls and potatoes. Garnish with parsley as desired.
