Cod with Garlic Mashed Potatoes and Green Sauce
Ingredients
- For potatoes
- 750 grams floury potatoes
- 4 garlic cloves
- salt
- 125 milliliters milk
- 2 Tbsps butter
- freshly ground peppers
- For sauce
- 1 handful flat-leaf parsley
- 1 sprig mint
- 2 Tbsps almonds
- 1 tsp sharp Mustard
- 75 milliliters olive oil
- salt
- freshly ground peppers
- For garnish
- 1 handful Arugula
- Lemon wedge (for serving)
Preparation steps
Peel the potatoes and the garlic. Boil the potatoes in salted water for about 30 minutes until tender. Add the garlic during the last 10 minutes of cooking.
Preheat the oven to 160°C (approximately 325°F).
For the sauce, rinse the parsley and mint, pat dry, pluck the leaves, and puree with the almonds, mustard, and oil. Season with salt and pepper.
For the fish, rinse the cod, pat dry and season with salt and pepper. Drizzle with olive oil and place on a parchment-lined baking sheet. Bake for about 10 minutes.
Drain the potatoes and garlic. Mash the potatoes and garlic with the hot milk and butter into a fine puree. Season with salt and pepper. Spoon onto serving plates.
Rinse the arugula and shake dry. Place some arugula on the mashed potatoes and top with a piece of fish. Drizzle with the sauce and serve garnished with lemon wedges.
