2 ⅔ cups red Gooseberry washed (use white if not available)
0.333 cup light Agave syrup
vanilla extract
4 Kiwi (peeled and diced)
mint (leaves picked)
1 cup Almond milk

Preparation steps

1.
Combine the gooseberries, agave nectar, and vanilla extract with a couple of tablespoons of water in a saucepan.
2.
Cook over a low heat, stirring occasionally, until the gooseberries are softened and starting to break down.
3.
Add 1 l of iced water to the saucepan, stir well, and pour everything into a bowl. Add the kiwi, a few torn mint leaves, and the almond milk, stirring again.
4.
Cover and chill for 2 hours until cold.
5.
Ladle into bowls and serve with a garnish of chopped and whole mint leaves.
