¼ cup white Port wine
2 Tbsps powdered sugar
cup dry white wine or fruit juice (e. g. peach, apple)

Preparation steps

1.
Core approx. 150 g of melon balls and set aside. Chop the rest of the melon flesh and add to a bowl with the lime juice, orange juice and port. Add the icing sugar (more or less, to taste). Finally add the wine. Blend to a fine purée, adding a little more water if needed.
2.
Add the melon balls to the soup and chill for at least 2 hours before serving. Serve garnished with mint.
