¼ Green cabbage
2 Celery
3 scallions
1 small Leek
4 carrots
400 grams Cherry tomatoes
salt
freshly ground peppers
cold-pressed olive oil

Preparation steps

1.

Rinse and core the cabbage and cut into thin slices. Rinse the celery, leek, and scallion and slice thinly. Peel the carrot and slice thinly. 

2.

Heat 4 to 5 tablespoons of oil in a large saucepan and sauté all the vegetables. Add water to cover by 1/3, season with salt and bring to a boil. 

3.

Add the cherry tomatoes, reduce the heat, cover, and simmer for  20 to 25 minutes. Season with pepper and thyme. Drizzle with 1 tablespoon olive oil and serve immediately.
