- 36 ozs mixed Tomatoes (red, yellow, orange, green)
- 2 shallots
- 1 garlic clove
- 2 Tbsps olive oil
- 2 Tbsps Vegetable broth
- 2 Tbsps White vinegar
- 2 Tbsps Lime juice
- 1 tsp honey
- salt
- peppers
- 7 ozs Halloumi cheese
- ½ bunch Basil
- ½ bunch purple Basil
Preparation steps
Clean and wash the tomatoes. Leave smaller ones whole or cut in half, cut larger ones into slices.
Peel and chop the shallots and garlic. Mix both with oil and broth. Whisk in vinegar, lime juice and honey. Season the dressing with salt and pepper.
Mix the tomatoes with the dressing in a large bowl and leave to infuse for at least 30 minutes. Then season again to taste.
While tomatoes are cooking through, pat halloumi dry, cut into 4 slices and grill on preheated grill for about 3 minutes on each side.
Wash basil, shake dry, pluck leaves and add to tomato salad with halloumi slices.
