7 ozs Corned Beef
1 Tbsp butter
2 Tbsps freshly chopped parsley
5 eggs
salt

Preparation steps

Peel onion and chop finely. Peel potatoes and cut into pieces. Chop corned beef. Lightly brown potatoes in a pan in hot butter. Add onion and saute for 1-2 minutes. Add corned beef. Whisk eggs with parsley and season with salt and pepper. Pour over potatoes. Let mixture cook and thicken over low heat. Cover and cook for about 5 minutes. Flip omelet over and cook on other side for a few minutes.

Cut into pieces. Garnish with arugula to serve.
