2 red onions
1 garlic clove
2 Tbsps olive oil
350 grams Couscous (instant)
700 milliliters Vegetable broth
2 Tbsps freshly chopped mint

Preparation steps

Thaw the beans. Peel the onions and garlic. Halve the onions and julienne, and finely chop the garlic. Sauté in the oil for 1-2 minutes.

Mix the couscous and the beans to a saucepot. Add the broth over the couscous. Cover and simmer gently for 10 minutes until everything is tender and the liquid has been absorbed. Mix in the mint, and season to taste with salt and pepper.
