Ingredients

- For the dip
- ½ cup roughly chopped Peanuts
- 4 Tbsps sweet Chili sauce
- 2 Tbsps Fish sauce
- 1 Tbsp chopped cilantro
- 4 sheets Rice paper
- 2 carrots (cut into thin strips)
- 14 ozs canned Crabmeat (drained)
- 1 bunch Thai basil (leaves only)
Preparation steps
1.
For the dip: toast the peanuts in a dry frying pan until golden brown.

Pour in the chilli sauce and fish sauce and stir. Add a little water if the mixture is too thick. Remove from the heat and allow to cool. Add the coriander.
3.
Soak the rice paper sheets according to the instructions on the packet.
4.
Divide the carrots, crab meat and Thai basil leaves between the rice paper sheets and place in the centre of each sheet and roll up.
5.
Cut in half and serve with the dip.
