- 1 cup low-fat cream cheese (softened)
- ¼ cup Cottage cheese
- 1 clove garlic cloves (peeled and minced)
- 1 pinch crushed Red pepper flakes
- 2 tsps fresh lemon juice
- 1 small Zucchini (rinsed; trimmed and shredded)
- 3 Tbsps chopped, fresh Fresh herbs (such as parsley, thyme, chives, dill)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 4 cherry Tomatoes (rinsed; trimmed and sliced)
- 1 carrot (peeled and grated)
- 4 slices Whole Wheat Bread
- 8 slices Crispbread (Wasa® recommended)
Preparation steps
1.
In a medium bowl, combine cream cheese, cottage cheese, garlic, red pepper flakes, and lemon juice, stirring to blend. Fold in 3/4 of the shredded zucchini, reserving the remainder for topping. Add herbs and season with salt and pepper, to taste.
2.
Spread the seasoned cream cheese mixture over the bread and crackers. Top with a combination of sliced tomatoes, shredded carrots and remaining zucchini. Serve.
