125 grams Rice flour
100 grams dried Cranberry

Preparation steps

1.

Preheat a convection oven to 180°C (approximately 350°F).

In a bowl, beat the butter and sugar until light and fluffy. Sift the flour and rice flour into the bowl. Knead the mixture into a smooth dough. Chop the cranberries and knead into the dough. Shape into a disk, wrap in plastic wrap and refrigerate for 30 minutes.

On a floured surface, roll the dough to 4 mm (approximately 1/4 inch) thick. Cut out hearts. Dust the hearts with the sugar and place on a parchment-lined baking sheet. Bake until light golden, about 10-15 minutes. Remove from oven, remove the parchment paper and cookies from the baking sheet and allow to cool before serving.
