1 ½ cups dried White bean
1 Tbsp butter
1 onion (finely chopped)
1 garlic clove (finely chopped)
4 cups vegetable stock
1.333 cups floury potatoes (peeled and diced)
cup cream (at least 30% fat)
1 Leek (cut into rings)
1 red pepper (diced)
2 Tbsps Chives

Preparation steps

1.
Soften the beans overnight in cold water.
2.
Heat the butter in a pot and fry the onion and the garlic. Drain the beans and add them to the pot. Add the stock and cook for 1.5 hours until the beans are soft. Add the potatoes 40 min before the end of the cooking time.

Set aside 6 tbsp of the beans and puree the rest of them. Add the cream and mix well. Season with salt, and ground black pepper and add the leek, pepper and the beans. Simmer on a medium heat for around 5 min. Season to taste and serve in soup bowls garnished with chives.
