14 ozs Tagliatelle
4 cups turkey breasts (skinned, cut into 2 cm thick slices)
1 Tbsp clarified butter
1 Red onion (cut into fine rings)
flour
1 shallot (finely chopped)
1 tsp butter
½ tsp flour
1 cup chicken stock
½ cup Gorgonzola (crumbled)
3 Tbsps white Port wine
3 leaves Endive (cut into strips)
3 Tbsps Walnut (chopped, to garnish)

Preparation steps

1.
Cook the pasta in boiling salt water until al dente.
2.
Season the meat with salt and ground black pepper.
3.
Heat the clarified butter in a pan and fry the onion rings. Remove from the pan and set aside.
4.
Dust the meat with flour and knock off any excess. Fry the meat in the remaining clarified butter on all sides and then keep warm in the oven.

Fry the shallot in the butter, add 1/2 tsp flour and the stock and stir well to remove any lumps. Bring to the boil and allow to bubble for 5 min. Remove from the heat, add the Gorgonzola and stir until it dissolves. Season to taste with wine, salt and ground black pepper and add the onion rings.
6.
Drain the pasta and arrange on preheated plates along with the endive. Top with some of the meat and add the sauce. Serve garnished with walnuts.
