Preparation steps

1.

Rinse and peel kohlrabi, potatoes and carrots, then cut into thin slices. Layer prepared vegetables in a gratin pan. Season with salt and pepper.

2.

Separate egg. Whisk quark with egg yolk and milk, season with salt and pepper. Chop herbs finely and stir into quark mixture. Beat egg white until stiff and fold into creamy mixture, Spread mixture on the vegetables.

3.

Bake in preheated oven at 150°C (approximately 300°F) for about 50 minutes (cover with foil if gratin browns too quickly). Sprinkle with pumpkin seeds about 5 minutes before the end of baking. Remove from the oven and serve.
