Preparation steps
Rinse and peel potatoes and cook for about 20 minutes in boiling salted water.
Coarsely chop the hazelnuts while the potatoes cook. Rinse the parsley, shake dry, pluck off the leaves and chop.
Heat the milk just before the boiling point.
Drain potatoes and return to pot, allowing all the liquid in the pot to evaporate.
Mash the potatoes.
Stir in hot milk with a whisk. Season with salt, pepper and 1 pinch of freshly grated nutmeg.
Heat butter and olive oil together in a small pot. Sauté hazelnuts and parsley briefly. Pour over the potatoes.
