1 kilogram starchy potatoes
250 milliliters milk
50 grams butter

Preparation steps

Rinse the potatoes and place in a pot. Add enough water to just cover the potatoes, and bring to a boil. Cover, reduce the heat, and cook for 30 minutes, until soft.

Drain the poatoes, and peel while still hot. Pass through a ricer into a bowl. Bring the milk to a boil in a small saucepan, then remove from the heat. Add the butter, in pieces, to the mashed potatoes. Season to taste with salt and nutmeg and stir until combined. Gradually incorporate the milk, stirring until a slightly loose creamy puree forms. Season to taste and serve.
