Potatoes are a carbohydrate that provide a lot of nutrients and energy, making this salad the perfect thing to keep you full and satisfied.
You can make this for dinner along with some chicken or other meat and take it into the office the next day for the perfect lunch. It is also a great dish for barbecues and picnics!

- 4 cups new potatoes
- 1 Red onion (finely sliced)
- 2 Tbsps white balsamic vinegar
- 4 Tbsps vegetable stock
- sugar
- 2 tsps mint (chopped)
- ⅔ cup low-fat Yogurt (natural)
- White pepper
- 2 Tbsps lemon juice
- 2 Tbsps Chives
- mint (to garnish)
Preparation steps

Cook the potatoes in boiling, salted water for around 25 min. Drain and leave to cool.

Fry the onion in 1 tbsp oil. To make the dressing, mix together the vinegar, stock, salt and ground black pepper and season with sugar.

Depending on their size, either halve or quarter the potatoes. Mix with the dressing, half the mint and the onion and leave to marinate for at least 1 hour.

Mix together the yogurt, white pepper, salt and lemon juice and stir in the chives and the remaining mint. Arrange the potato salad in bowls, add some yogurt dressing and serve garnished with mint leaves.
