- 1 Vanilla bean
- 100 milliliters milk
- 300 milliliters Whipped cream
- 1 tsp Orange zest
- 4 egg yolks
- 50 grams sugar
- 3 Tbsps brown sugar
- 300 grams fresh Strawberries
- mint (for garnish)
Preparation steps
Preheat the oven to 140°C (approximately 275°F) lower and upper heat.
Cut the vanilla bean in half lengthwise and scrape out the seeds. Boil the milk and the cream with the vanilla seeds, vanilla bean and the zest. Beat the egg yolks with the sugar until creamy, but not foamy. Gradually add the hot vanilla cream into the egg yolk mixture, whisking constantly. Pour the cream through a strainer into ramekins. Place the ramekins on a deep baking sheet or in a roasting pan. Pour in enough water to reach about 2/3 up the sides of the ramekins. Bake oven for about 60 minutes or until thickened.
Remove from the oven, let cool and chill in the refrigerator.
Trim the strawberries, rinse and pat dry and cut into quarters. To serve, place in a bowl.
Before serving the creme brulee, sprinkle with the brown sugar and slide under hot broiler until the surface os caramelized (or use a hand torch).
Serve the creme brulee with fresh strawberries and garnished with mint leaves.
