1 handful Wild strawberry (for garnish)

Preparation steps

Preheat the oven to 120°C (approximately 250°F).

bring the milk, cream, scraped vanilla seeds, and vanilla pod to boil in a pot. Beat the egg yolks with the sugar until creamy but not foamy. Gradually incorporate the hot vanilla cream. Pass the mixture through a strainer into four ovenproof ramekins. Place the ramekins in a roasting pan or deep baking dish and pour enough hot water to submerge 2/3 of the ramekins. Bake for 1 1/4 hours, or until the custard has set in the middle. Remove from the oven, cool, and then chill in the refrigerator.

Before serving, dust the crème brûlées with brown sugar, and caramelize lightly under the broiler (or do so with a kitchen torch).

Serve, garnished with the stemmed strawberries on top.
