120 grams sugar
1 generous pinch Vanilla bean
200 milliliters Whipped cream
200 milliliters milk
2 eggs
2 egg yolks
mint (for garnishing)

Preparation steps

1.

Place deep baking dish into preheated oven at 180°C (approximately 350°F) and fill up to 1/3 with hot water.

Caramelize 60 grams (approximately 2 ounces) of sugar in a pot until golden. Pour into 4 ovenproof ramekins (8 cm in diameter) (approximately 3 inches). Whisk eggs, egg yolks, remaining sugar,  vanilla, cream and milk together. Strain through a sieve into ramekins. Place filled ramekins in a baking dish with water and bake in preheated oven for about 30 minutes. Remove from oven and cool, refrigerate for at least 3 hours.

Briefly dip ramekins into hot water and invert onto plates. Garnish with mint and serve.
