9 ozs milk (low fat)
2 Tbsps Orange blossom water or Orange juice
8 ¾ ozs Whole Grain Spelt Flour
2 Tbsps Maple syrup
1 pinch salt
1 oz melted butter
12 ozs Strawberries
6 ½ ozs Blueberries
8 tsps Canola oil

Preparation steps

1.

For the dough, mix eggs with milk, orange blossom water, flour, maple syrup and 1 pinch of salt until smooth and let swell for 20 minutes. Then gradually stir in liquid butter.

Meanwhile, clean and wash berries. Cut strawberries into quarters.

For the crêpes, heat a large frying pan and bake 8 crêpes in succession. Brush each with 1 tsp oil, pour in 1 ladle of batter, and bake over medium heat for 2-3 minutes per side. Keep the crêpes warm in the preheated oven at 80 °C / 175 °F.

4.

Fold crêpes, arrange on plates and spread a few berries on top. Serve the remaining berries separately.
