- For the dough
- 130 grams Pastry flour
- 1 pinch salt
- 200 milliliters milk
- 2 eggs
- 20 grams melted butter
- For the filling
- 1 kilogram Sour cherry
- 1 packet Pie glaze
- 4 Tbsps sugar
- cinnamon
- Cabbage
- To garnish
- 80 grams butter
- 250 milliliters Whipped cream
- 1 packet Vanilla sugar
- 1 Tbsp Cherry brandy
- 3 Tbsps Chocolate sprinkles
Preparation steps

For the filling: Rinse the cherries. Remove the stems and pits. Mix the pie glaze with the sugar and 1 pinch of cinnamon in a saucepan. Add the cherry juice and bring to a boil while stirring. Add the cherries and bring to a boil again. Chill.

For the dough: Mix all the ingredients together and let rest for 15 minutes.

Melt 10 grams (approximately 1 tablespoon) of butter in a small pan. Cook 8 crepes. Spoon about 1/8 of the dough at a time and cook on each side for about 2-3 minutes, until done. Let cool.

Beat the cream with the vanilla sugar and kirsch until stiff. Layer the crepes with the cherry compote and cream in separate layers until finished. Decorate with chocolate sprinkle and serve immediately
