140 milliliters milk

1 egg yolk
1 Tbsp lemon juice
1 pinch salt
3 Tbsps clarified butter

Preparation steps

For the crêpes: Whisk the milk, flour, melted butter, sugar, eggs, egg yolk, lemon juice and salt until smooth. Let stand for 20 minutes. Working in batches, melt the butter in a small crêpe pan and cook 8 crêpes until golden brown on both sides. Keep warm in a preheated oven at 70°C (approximately 150°F).

For the fruit: Blanch the peaches in boiling water, peel, halve, pit and cut into wedges. Rinse the raspberries and pat dry. Fill the crêpes with fruit and arrange on serving plates.
